Upon request Weyermann® are able to custom produce any of their malts from 100% organically certified raw materials, processed in accordance with all applicable organic standards.

Weyermann®
Acidulated Malt
Produced from quality spring barley. Lowers mash, wort, and beer pH. Contains 1−2% lactic acid. Enhances enzymatic activity in mash and improves extract efficiency. Lightens colour in pale brews. Enhances stability and extends shelf life of finished beer. Promotes well-rounded, complex beer flavor. Recommended Quantities: Each 1% lowers mash pH by 0.1.
Flavour: fruity and sour.

Malt Type 1
Produced from quality two-row spring barley. Imparts strongly malty notes to finished beer. Intended mainly for dark ales and lagers. Flavour: characteristic brewing malt with rich malt aromas; notes of light caramel, honey and bread.

Smoked Malt
Produced from quality two-row spring barley. Unique in the world. Initially formulated specifically for the traditional Bamberg Rauchbier (Bamberg Smoked Beer). Can be used for any kind of lager or ale with a complex flavor. Carefully dried over hot, smokey ambers of well-aged beech wood to achieve characteristic smoky flavor, while preserving relatively pale colour.
Flavour: characteristic, well-rounded aroma of beech wood smoke; malty-sweet; notes of vanilla and honey.

Batch analysis of Weyermann® speciality malt

The “I-nigma” barcode reader is a free smartphone application which works very well to download the batch malt analysis by scanning the analysis code from Weyermann® bags.

In some operation systems the analysis pdf is stored in the “download” folder.
For I-OS: “IBooks” can be used to store the analysis.
The analysis can be printed or forwarded by email, WLAN or Bluetooth now.
